Sarsa's New Dishes - Celebrating Filipino Native Dishes!

Sarsa is one of my family's FAVORITE restaurant! When all else fails or when we just want comfort food, we turn to Sarsa!

Everything we've tried so far was delicious. Sinigang Fried Chicken (my daughter's fave), Isaw, Sizzling Kansi, Pritchon Pancake (can't Sarsa without this!!!), Kare-Kare, Twice Cooked Pork Belly, Batchoy Special, Chicken Pancit Canton and so much more!

Had the chance to attend the media preview of Sarsa's new dishes through an invite from looloo! Sarsalooloo x foodfanaticph = YEY!!!

A look inside, coming from the second floor

Their Rockwell branch was huge with a second floor to boot! Loved the ceiling to floor glass walls letting a lot of natural light in. High ceiling, drop lights and an overall cozy ambiance.

The second floor was smaller with a lower clearance but it had a more homey set-up, with a couch and lamps. It was more private and intimate.

Found out that they update their menu every 6 months and this launch was in time for Chef JP's birthday! Inspired by his local travel plus love for Negrense Cuisine, Chef JP came up with 8 new dishes showcasing local ingredients and flavors from different Philippine Regions!


Let me drill down:



Deep Fried Dilis from Sarsa Kitchen + Bar

Nothing extra ordinary - Dilis coated with batter, deep fried to a golden brown crispy perfection.What I liked here though were the dips!

Mango Tuba and Aioli Sauce leveled up the game here! Make sure to dunk each piece into each dip!



Sinigang na Bangus Belly  from Sarsa Kitchen + Bar

Not the usual Sinigang because it was a little bland, needing more sourness. They grilled the fish then they used Batwan instead of the usual tamarind. Batwan, btw, is the cousin of Mangosteen and it's used as the souring agent in Ilonggo Cusine. This soup dish also had Ginamos which is an Ilonngo version of Bagoong. 

Side Note: try their Ginamos Fried Rice! It's delicious if you like Bagoong! Also, according to Chef JP Anglo, they're removing the Sinigang Fried Chicken from their menu! WHY?!?


Squid Pinangat from Sarsa Kitchen + Bar

I like anything with coconut milk and I've been introduced to Pinangat when I was in college because of Bicolana housemates. I've tasted the authentic and I must say that this version is good! The rich coconut milk, the tender squid chunks and the kick of chili went well together. This is best consumed with warm rice.

Side note: Pinangat is also like Laing. I think the method of cooking is the only difference. Pinangat is wrapped in coconut leaves then simmered in coconut milk.

Never thought that Squid with Pesto would go so well! The squid was tasty and the pesto sauce wasn't too strong!

The prawns were over cooked, bordering mushy. However, the sauce was awesome! Talangka Sauce + Coconut Milk? Perfect combination!

One of my favorites, this one had gata plus Batchoy stock. If you've tried their Batchoy, you'll surely taste the sweet savory flavor here. Spice level was low and the only thing I didn't like was the not so tender beef.

Nothing special here. Just your usual grilled Tilapia topped with lots of garlic and served with Bell pepper Tuba.



Liempo Pork Adobo Sarsa Kitchen + Bar

This was the best viand. Adobo may sound too common but this one was done right! Perfect sweet-salty sauce, tender and flavorful meat, crunchy Adobo Flakes, fried egg and boiled egg! Loved the runny yolk!

If there was one WOW thing that was served, it's THIS! The unassuming balls covered with panko on a bed of Pandan Cream Sauce were the bomb!

The chocolate inside tasted so familiar and we later found out that it was melted Flattops. You ask where the squash is? It's the shell that contains the chocolate.

Loved the crunchy bite an the oozing chocolate inside. The Pandan Cream Sauce will perfectly cut any cloying factor from this dessert. Trust me, THIS IS A NO SHARING DESSERT!!!

We also got to try their Isaw, which is already a staple when we go to Sarsa, and their Grilled Chicken Skin which was too salty for my liking. Also, chicken skin is still best when fried.

Then there was Chicken Inasal - Paa and Petso! Since I'm not a fan of chicken breast or white meat, I went for the leg quarter!

The chicken was tender and juicy, a little salty and hints of sweetness. I liked it! Perfect with some chicken oil, toyo, calamansi and sili!




Sago't Gulaman from Sarsa Kitchen + Bar

For drinks, I opted for their Sago Gulaman which was so good! Just the right sweetness, lots of small tapioca and black gulaman cubes! Ahhhhh... perfect for a sunny day!

Overall, I would say that I would order the Adobo and the Kalabasa Choco Balls again and would even reco them to my hubby!
